Olio La Feline

Pure and biological ‘extra vergine’ olive oil

Our olive oil ‘La Feline’ is a pure and biological ‘extra vergine’ olive oil with a peculiar taste.    The whole production process from olive to packaged olive oil is carried out (as much as possible) and fully controlled by us allowing us to guarantee an optimal level of quality.   During the whole process we are also assisted and advised by local people.

Olive grove

Our olive grove consists of circa 149 trees, the oldest ones are several centuries of age whereas the youngest ones just a few decades.    The olive grove has a high bio-diversity which means it contains different kinds of olives.  The olives develop from green into purple to black during the ripening process .  The locations of the olive groves are Contrada Abate Ventura & Contrada Giovanni Fasano, 2 rural hamlets of the town of Ostuni in Puglia, Italy.   Our olive grove is maintained all year round ie the weeds are always cut, the land is rotivated several times per year and the olive trees are regularly pruned.

Harvest and cold pressing

The olives are picked with a special tree-friendly machine using mechanical vibration, collected into nets and brought directly to the mill where they are cold-pressed on a separate biological production line (within 24 hours).  This is a closed extraction system using hydraulic presses to avoid oxidation which will help in preserving the excellent taste of the olive oil.  Only this way one can obtain an extra vergine oil with a very low degree of acidity (< 0.3%)

Fragrance, taste & colour

The young olive oil has an intense & natural fragrance of freshly picked olives.
The taste is softly spicy with a pleasant bitterness.  The peppery taste – with a significant sting in the back of the throat – is the most important feature of a high qualitative olive oil.  When the olive oil matures, it will transform into a smooth & gentle taste.    Initially the oil has a bright green colour which will gradually develop into a golden colour.
Due to the bio-diversity of our olive grove the composition (colour, taste & fragrance) of our olive oil can vary but the premium quality will never change.

Preservation and use

After production the olive oil can be preserved for at least 18 months.   If stored at a cool, dry & fresh place the useful life of the olive oil can be extended to 30 months.
We produce unfiltered olive oil ie a 100% biological product which means that you might find some sediment in the bottle which is fully normal.
Olive oil can be used for cold as well as hot preparations.
Cold : very tasteful on a salad,  as a dressing ingredient or to add a touch of flavour to grilled meat or fish.
Hot :  all deep-frying preparations eg tempura of vegetables
